Cookies, Bars, & Biscotti
If you’ve been baking (or just following) along with us, you may be surprised to see Cookies cropping up now. After all, we’re just finishing the Puff Pastry section, and Cakes come next in the book. But as our friend and fellow Modern Baker Kayte pointed out to me, the holiday season is fast approaching. And since most of us bake cookies over the holidays, she suggested flip-flopping the last two sections so we could start Cookies in December.
So, we will be baking from the Cookies, Bars, & Biscotti section from December through May of next year. As I’ve done previously, I am allotting enough time to this section so that you can make one recipe every week (with one ”bye” week) and bake all the recipes in this chapter of the book.
I post my recipes on Mondays (I call it “Modern Baker Mondays”). Even though it’s not an official part of the Challenge, it helps keep me on track to get through the chapter in the allotted time. Feel free to join me by publishing your Challenge blog posts on Mondays, too, if you’d like. And whenever you make and blog a recipe, add a note to the Comments section for that recipe so we can link to it.
So, now it’s time to leave a comment below to claim your recipes for this section. There are plenty to go around, and I suspect most of us will end up as the official blogger for several recipes. If you want to claim more than one recipe, feel free. If we run short on recipes (not likely), I might ask you to give up your second (or third) choice so someone else can blog it.

Hi, I have not been around for a while. I left when I hurt my arm and just never got back. I am presently baking for the troops so cookies would make my life easier. If there is no problem, I will bake as a Modern Baker.

I didn’t realize that everyone was picking two! I can also do the Cornmeal and Pine Nut Biscotti since it remains unclaimed. (Plus I have a big bag of pine nuts sitting around in my freezer!)

I’ve only seen cocoa nibs one place locally and that’s at Whole Foods. They started carrying them in their bulk foods section not too long ago. Not sure, though, if all Whole Foods stores would have them.
I’m sure they can be found online somewhere I just haven’t looked into it yet.
They are available online. I’m hoping I can find them locally. We have a store called Earth Fare that might have them in bulk.
Thanks to Melanie’s suggestion, I stopped by Whole Foods today (much closer than the health food store Google told me about). Didn’t find them in the bulk food section, but did find a little package with their packaged dried fruit…hurray!
Oh man, I’ve visited this page 500 times, and I just can’t make up my mind!! I keep hoping that everyone else will pick and it will make my decision easier…they just all look so good! But here we go, I’m ready to commit: hubby picked the cocoa nib brownies for him, and I’ll pick the Viennese Punch Cookies for me because they look so cool. I’m so excited for this section!!!
First and last recipes — good choices! I’m excited to try that brownie recipe, but I’m not sure where to get cocoa nibs. Do you know where to find them?
I just did a Google shopping search and it popped up at some health foods store not far from here….Haven’t gone to check yet, but when I do, I’ll let you know! (That’s what took me so long to commit; they were hubby’s first choice, but I wanted to make sure I could find the nibs first.)
and out of nowhere I am back
We moved yet again to another state and now call Florida home and with the new home I finally have internet again. Oh how I missed the internet this past year and all of you too. I see you have been mighty busy and I have some major blogging to catch up too however i have been baking. Just made the Raisin Pecan spice bars two days ago and they are very nice especially for this time of year. So would like to continue were I left off if you would have me
. Just let me know what’s leftover and I bake whatever and blog about it. So here I am, sleeves are rolled up my book is out and the rolling pin is ready….

I’m claiming the Praline Pecan Disks and Three-way Gingersnaps.
Great timing for December through May as Matt will be down at college and cookies send down well! Then he will be home for the summer, as well as all his eating swim buddies, to eat cake! I have no real preferences as I hope to make them all…so put me wherever you need when others have claimed their favorites. Cookies are easy enough to find homes for and Mark eats them for breakfast every day, so I think I will do much better at getting it all done in this section.
